In Japan the quality is very high not only in the local cuisine but across all cuisines. In pizza and burgers in particular, quality and flavour are at a high level. The quality of the meat used is of course an important factor here.

Savoy in Tokyo is one of the city's leading pizza addresses. Alongside classic pizzas there are options with Japanese echoes, such as wagyu beef tartare or bluefin tuna. We didn't get the chance to try it, but the eight-seat Pizza Omakase at the Mandarin Oriental Tokyo also comes strongly recommended.

On a long trip through Japan, we'd recommend trying pizza and burgers as familiar flavours too.
