Kol Restaurant
Kol is a chef's restaurant opened in London's Mayfair in 2020 by the Mexican chef Santiago Lastra. Experienced through a tasting menu, Kol presents examples of Mexican cooking. It's serious about local sourcing: avocado and lime, both essentials of Mexican food, aren't used because they don't grow in England.
The winter tasting menu we tried had thirteen courses and the meal ran about two and a half hours.
From chapulín (grasshopper powder) to seaweed, lamb to scallops, chef Lastra takes you on a different but delicious journey through dishes built from very varied ingredients.
