Where to start
Alaf in Kuruçeşme may be our favourite restaurant in İstanbul. It carries Yörük culture and cooking into the present, and we think Michelin did it a real injustice by not giving it a star.
The rest of İstanbul is ambitious too: Lokanta 1741 inside the Cağaloğlu hamam, Olden 1772 inside a 250-year-old han in Sirkeci, Gallada by Fatih Tutak at the Peninsula hotel in Karaköy, and Türk Fatih Tutak in Bomonti, holding on to its two Michelin stars.
Outside the city, Od Urla, created by the İzmir chef Osman Sezener, is an experience in itself. And in Çukurbağ, Kaş, Serra Beklen — once head chef at Neolokal — receives guests in her own house: Capra.
