With hundreds of bouchons in Lyon, choosing is difficult, so it pays to go on recommendations. Le Poêlon d'Or, which we tried on someone's advice, is particularly good on offal.
The version of Lyon salad we had to start was a little different, but lovely. Found in almost every restaurant in Lyon, the salad recalls a Caesar, but the poached egg in it adds a flavour of its own. The duck liver with artichoke was also very good.
The star of the meal was fried sweetbreads served with a crème de morilles sauce and mashed potato. For anyone who likes offal, Le Poêlon d'Or is a wonderful place with a real range.
